[Oh the irony of both of those being real names... vs Smoker which isn't.] Pirates don't usually pick their bounty name, it's just something the marines working on the bounties come up with to describe them for civilians. It's not like we can give out the whole information file, so they try to use identifiable tidbits to make them easier to hunt down. Sometimes they reference fighting styles for the sake of bounty hunters. Like Black Leg Sanji reminds people of Red Leg Zeff, only the idiot cook wears suits instead of just getting his legs red with blood. Sort of a code.
